Recipe of the Week: Banana Pancakes

In case you hadn’t eaten enough pancakes on Shrove Tuesday, here is a crowd-pleaser you can make for those rainy days, where you sleep in and pretend like it’s the weekend (if you know, you know). 

Ingredients:

  • 2 (preferably ripe) bananas
  • 2 eggs
  • 1½ cup of oats
  • ½ cup of milk
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • Toppings — e.g. fruit, yoghurt, nuts/seeds, honey, maple syrup

Method:

  1. It really is as simple as blending it all together! 
  2. Heat oil or butter in a non-stick pan, then pour in a ladleful of batter (-  you could even add a few blueberries in too!)
  3. Once cooked on one side, flip the pancake over and cook on the other side until golden brown. 
  4. Remove from the pan and repeat until you’ve got a nice stack of pancakes! 
  5. Garnish with toppings and enjoy!
