In case you hadn’t eaten enough pancakes on Shrove Tuesday, here is a crowd-pleaser you can make for those rainy days, where you sleep in and pretend like it’s the weekend (if you know, you know).
Ingredients:
- 2 (preferably ripe) bananas
- 2 eggs
- 1½ cup of oats
- ½ cup of milk
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp vanilla essence
- Toppings — e.g. fruit, yoghurt, nuts/seeds, honey, maple syrup
Method:
- It really is as simple as blending it all together!
- Heat oil or butter in a non-stick pan, then pour in a ladleful of batter (- you could even add a few blueberries in too!)
- Once cooked on one side, flip the pancake over and cook on the other side until golden brown.
- Remove from the pan and repeat until you’ve got a nice stack of pancakes!
- Garnish with toppings and enjoy!
